Ingredients:
- 1 box (about 15 oz) sugar-free brownie mix (like Pillsbury or similar low-calorie brand—I have the low-cal mixes I use listed here)
- 1 can (15 oz) pure pumpkin puree (unsweetened, not pumpkin pie mix)
- ½ cup unsweetened applesauce (optional for a slightly lighter texture, but you can leave this out if sticking to three ingredients).
Instructions:
- Preheat your oven to 350°F (175°C). Grease or line a brownie pan with parchment paper.
- In a large mixing bowl, combine the brownie mix and pumpkin puree (and applesauce, if using). Mix until fully combined. The batter will be thick.
- Spread the mixture evenly into the prepared pan.
- Bake for 20–25 minutes or until a toothpick inserted in the center comes out mostly clean.
- Allow to cool before slicing into 18 equal pieces.
Notes: Without the optional applesauce, the recipe is strictly three ingredients and still moist and fudgy!
