I used lite coconut milk And at the end I top with a squeeze of fresh lime juice. Note that if you have Thai basil in your garden that would work great instead of the cilantro. I added basil leaves.

Chop the veggies. Heat oil on a deep pan. Add chopped eggplant fry till soft and brown.

  • Add boiled garbanzo and saute for 2 minutes. Now add red curry paste, sugar, coconut milk and water. Mix well.

  • Allow the curry to boil. Add the chopped sweet peppers, cover and cook till they are done. Use this curry for lunch/dinner.
