Ways to Eat Your Sweet Potato Toast

I love sweet potato toasts topped with smashed avocado, sliced hard boiled egg, and salt + Everything Bagel Seasoning. PS – Even Walmart now sells the Everything Bagel seasoning! I had three this morning for a whopping total of $1.25. Round it out with some roasted veggies and voila!

Want something sweet? Also delicious – sweet potato toast + nut butter + banana, yum! Or, you could swap out blueberries or strawberries instead of the banana with some toasted coconut flakes on top. If you aren’t on a Whole30, you could also drizzle that one with honey.

A Quick Budget-Friendly Breakfast 

Some stores sell Caulipowered brand of frozen sweet potato toast slices, which is super convenient. But they cost $6-8/bag depending on the store. You can easily make the same amount for $2 with only 10 minutes of prep time.

Sweet Potato Toast is simple to make. Also, it’s even easier when you make them in bulk and freeze, then just toast or air fry the morning of. Throw in a batch of hard boiled eggs you pre-made (or buy the hard boiled eggs in pre-cooked packs from Costco or Sam’s Club), and this just became your new favorite 5-minute breakfast.

How to Make Ahead Sweet Potato Toast Slices 

I didn’t like the result of just toasting the sweet potato toast slices in a toaster. I preferred to cook a big batch of sweet potato toast slices in the oven or air fryer all at once. Then, they can be frozen and reheated in the toaster or air fryer.

Cutting the Sweet Potato Toast Slices

First, to cut the sweet potatoes, make sure your knife is nice and sharp. Sweet potatoes are notoriously dense and hard to cut through. If I don’t feel like getting out my knife sharpener, I at least sharpen it on the bottom of a mug. You can see how to do that here – so handy!

Cut off the ends of the sweet potato. Then stand the sweet potato up on its end and cut in half length-wise. Take one of the halves and cut it into long slices to desired width (I usually aim for a 1/4 of an inch, but it’s not an exact science). Try to keep slices uniform in width so they will cook evenly. 

Or, if you prefer not to cut them by hand, you can use a mandolin slicer. Set it on a nice thick setting. I have tried many mandolins slicers and this is the one I have and love!

Roasting the Sweet Potato Toast Slices

Lightly toss or brush slices of sweet potato with oil on both sides. Just a little, don’t drown the potato in oil, or your toast will be soggy! If baking, line a baking sheet with parchment and lay out potato slices in a single layer. Bake for 10 minutes at 425, until tender, then broil on each side for 5 minutes (flipping to get both sides).

If airfrying cook at 375 for 10 minutes (or at 325 if you have an airfryer like mine that runs hot). Make sure they are in a single layer, and flip once.

These are freezer-friendly! Freeze in a single layer then store in the freezer in a sealed bag or container for up to 3 months. Toast or airfry to reheat.
