Lastly, I avoid using large amounts of butter and corn syrup in my baking. Instead, I use an ingredient that might sound unusual: puréed avocado. If you haven’t tried baking with avocado yet, you’re in for a delightful surprise!
Avocados aren’t just a healthier alternative to butter with far less saturated fat. They also make cake batters, pie fillings, and frostings incredibly moist and silky.
In my opinion, avocados are the ultimate dairy-free, paleo-friendly butter substitute.
White Sweetener of Choice: I use white monk fruit sugar, a sugar-free sweetener.
Salt: To enhance the flavor.
Avocado Oil or Butter: You can make a buttery crust or use avocado oil as a delicious alternative. It also has a lot less saturated fat than butter and works beautifully in this crust recipe.
An Egg: Helps bind the crust.
Vanilla Extract: For additional flavor.

Puréed Avocado: This recipe is sweetened with brown monk fruit, and puréed avocado replaces the corn syrup usually found in pecan pie. Yes, it sounds weird, but you can’t taste the avocado at all.
Unsalted Butter: Only 2 tablespoons in the diabetic pecan pie filling.
Eggs: Room temperature eggs (leave them out for 15 minutes beforehand) add creaminess to the filling. They also provide structure to the sugar-free pecan pie.
Brown Sweetener of Choice: I use a brown sugar substitute such as Lakanto golden monk fruit sweetener or Swerve brown zero calorie sweetener.
Maple Syrup or Additional Monk Fruit: Maple syrup brings a deep, caramel-like sweetness to pecan pie, complementing the nuttiness of pecans.
Pecans: Chopped pecans or pecan halves are, of course, the star ingredient.
Cinnamon: Adds warmth and depth
Vanilla: Amplifies the sweetness and complements the nuttiness of the pecans and caramel notes in the keto pecan pie filling.
Salt or Sea Salt: Intensifies the sweetness and brings out the richness of the other ingredients.

No, you don’t need to line the pan with parchment paper if you use a Pyrex glass pie dish. The same applies to a standard aluminum nonstick pie pan. You also don’t have to grease it.
How do I cut a slice of pie without scratching the bottom of my pie pan?
The easiest way is to remove the pie from the pan. You may need to gently run a thin spatula around the edges to loosen it. But you should be able to slide the pie onto a pan.
Do I need a pie guard or shield to keep the edges from over-browning?
I recommend tenting the pie with aluminum foil after 10 minutes of baking, making sure it doesn’t touch the filling.

Instructions
Make The Almond Flour Pie Crust
Prick the bottom of the crust with a fork. Then partially bake the almond flour pie crust for 8 minutes in an oven preheated to 350 F (177 C). You will bake it further after adding the filling.
Make The Pecan Pie Filling
Preheat oven to 350 F (177 C).
Purée the avocado with a hand-held emulsifier or in a food processor until it is silky, smooth, and all the lumps are gone.
Combine the pureed avocado, butter, eggs, granulated brown sweetener, maple syrup or monk fruit, vanilla, cinnamon and salt in a medium-sized mixing bowl.
Stir in the chopped pecans.
Pour the filling into the pre-baked pie shell.
Top with ½ to 1 cup of chopped or whole pecans and create a pattern or design, if desired.
Bake the Pecan Pie
Bake at 350 F (177 C) for 40-50 minutes or until a knife comes out clean.
10 minutes into baking, loosely tent it with aluminum foil, making sure the foil doesn’t touch the filling.
The pie is ready when a knife inserted into the center comes out clean.
Once the pie is ready, let it cool completely. Then, refrigerate for several hours or, ideally, overnight before serving.
Toppings for Pecan Pie
Serve as is or top with sugar-free whipped cream, ice cream or caramel sauce.
