This calorie-free, sugar-free Stevia Syrup is a perfect way to sweeten up cocktails and mocktails using only natural sweeteners.
This quick and easy Stevia Simple Syrup is just one way we lighten up our cocktails. Other ways include not adding sweetener at all, or using diet ingredients, such as diet tonic in a gin and tonic. Other full sugar simple syrups we love are Cranberry syrup, Lemon syrup, rhubarb syrup and apple cider syrup. Any of these can have Stevia used instead of regular sugar, too!

If you’re watching the calories like we are right now, substituting Stevia Syrup for regular simple syrup can help. Stevia is a zero calorie, plant based sweetener that is many times as sweet as sugar.
You’ll have to make your own judgments if there are health benefits or not in using Stevia, but we have found that Stevia Syrup works for us in most cocktails.
Stevia is an all natural plant that is actually 30 times sweeter than sugar, so you don’t even need to use as much sugar as you would otherwise. Try our Watermelon Syrup, too!
Ingredients in Stevia Simple Syrup
First of all, you only need three simple ingredients:
- Powdered Stevia – usually in a homemade simple syrup, it’s a 1:1 water to sugar recipe, but you need less of powdered Stevia than sugar.
- Water – regular tap water works!
- Salt – this helps cut down the sweetness and bitterness of the Stevia. Optional, but we like it.
You can leave the salt out if you prefer, but we love the dash of salt, as it takes some of the bitterness out of the stevia syrup. Just our preference of course.
What can Stevia Simple Syrup be used in?
We use Stevia Simple Syrup in recipes that are calling for plain simple syrup. In this case, it is our cocktails and mocktails. You can also use it in any drinks that are adding maple syrup, sugar, or agave. With a stevia syrup on hand, it’s easy to add just bit to get the sweetness you’re looking for.
Simple syrup is one of the most common ingredients in cocktails. We use it in almost every recipe we do. Whether we add flavor to it from spices (spiced honey syrup) or herbs, or keep it simple, it’s a basic of cocktail making.
How to Make Simple Syrup with Stevia
For anyone who hasn’t ever made a simple syrup, it’s an easy homemade recipe of water with sugar dissolved over heat. Sounds easy, right?! This Stevia Simple Syrup is just as easy, but is a zero calorie simple syrup! Stevia sweetener is a plant-based sweetener sugar substitute.
If you are asking yourself if you can make simple syrup with Stevia, the answer is yes! Sometimes reducing your sugar consumption is necessary for blood sugar, if you are doing keto or just to cut your pure sugar consumption, or it can just make you feel better about drinking a cocktail. Enter this easy syrup. Since stevia is 30x sweeter than sugar, the recipe isn’t the same as regular sugar syrup, which is equal parts 1:1.
But, in this case you don’t need a cup of stevia to one cup of water. Use it in lavender syrup or peach syrup, too! Stevia is a perfect addition to a flavored simple syrup, just make sure to leave time for the infusion.
Because of the increased sweetness of Stevia, this sugar-free syrup is easily made over low heat in a small saucepan. Bring to a simmer, then take off of heat and bring to room temperature.
We just use it exactly as called for in cocktail recipes in place of the regular simple syrup. If it seems too sweet (or not sweet enough) you can put in more or less. Tips & Tricks
- Stevia – you can use any brand, if you use it regularly, use a brand you like. We just used one we can get at our grocery store of choice, but it’s available online at Amazon if you can’t get it at your grocery store.
- Why syrup? You can feel free to use Stevia extract in cocktails and mocktails if you would like, but we like making the actual Stevia syrup because of the texture and viscousness it adds to drinks, but, feel free to use liquid stevia if you just need to add a dash of sweetness in your drinks.
