The muffins are so easy to whip up, and the recipe is easy to double or triple for weekday meal prep. They are the perfect afterschool snack, grab-and-go breakfast, or active evening snack!

How To Make Muffins With Kodiak Pancake Mix:
Grease your silicone muffin pan with oil, or line your muffin pan with muffin liners. I like silicone because there is no trash! I am sure I am not the only mom who has to worry about where the kids put their garbage!
Preheat your oven to 350 degrees and get started on mixing.
Combine all your wet ingredients in a bowl and mix well with a whisk.
Next, mix in your dry ingredients except for your sprinkles and mix well.
Slowly fold in your sprinkles; you can reserve some to add to the top of the muffins before baking.
Scoop into your muffin pan. I use a potato scoop to scoop the batter into the muffin pan. It makes for a much easier and cleaner process.
Bake for about 15 minutes and start to check the doneness of the muffins.

Test the muffin for doneness with a toothpick or small food skewer. The toothpick will come out batter-free; you may have some melted rainbow sprinkles on it.

While the recipe is not wrong, you can alter it. It does take experimenting to get it right sometimes, but that’s half the fun of baking.

How To Store Funfetti Muffins
Store in an air-tight container or bag. These can be stored on the counter for up to 5 days or can be frozen. If freezing, thaw and eat within 90 days of baking them.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
