Because so many people tried and loved the full size Protein Carrot Cake Loaf I made, I decided to go for a single serving version of that.
This is pretty much a mini carrot cake recipe with the same set of ingredients, so you have the perfect macro friendly dessert for one!
Make it in a mug and top it it with a simple Greek yogurt icing and all those cravings will be gone.
Ingredients for Single Serve Protein Carrot Cake
This healthy high protein single serve carrot cake is made with clean and simple ingredients like protein powder and applesauce. It’s quite a low fat and low calorie carrot cake too.
Flour – I use 1:1 Gluten Free Baking Flour, but Whole Wheat Pastry Flour or regular All Purpose flour works here too.
Vanilla Protein Powder to add sweetness. This is the replacement for the sugar in this recipe; I used Quest Nutrition whey-casein protein powder.
Cinnamon and nutmeg
Baking Powder
Unsweetened Applesauce; as a replacement for most oil in other recipes
Unsweetened Almond Milk

Alternatives for Healthy Protein Carrot Cake for One
This carrot cake protein mug cake works best with the ingredients I used, but here’s some other healthy options you could try as well:
Flour: All purpose flour, Whole Wheat Pastry Flour or 1:1 Gluten Free baking flour, with the same amount by weight, not cups.
Applesauce: You can replace this with mashed Banana or Pumpkin Puree, but this might alter the flavor a little
Almond Milk: Any other non-dairy or regular milk
Greek Yogurt: Use coconut yogurt instead!

Use a plant based protein powder and coconut yogurt to make a Vegan single serve protein carrot cake There’s no cream, no butter and no eggs in here already 🙂
For the protein powder, I recommend Birdman, KOS or Truvani. Be sure to also add a bit of sweetener in this case.
How to make Single Serving Carrot Cake with Protein Powder
This mini protein carrot cake recipe is really easy to make – just 5 minutes of effort and then bake!
To start, lightly grease a microwave safe mug
Mix all the dry ingredients – flour, vanilla protein powder, cinnamon, nutmeg and baking powder in a bowl.
Add the wet ingredients – unsweetened applesauce and almond milk.
Mix lightly to form the carrot cake protein mug cake batter. It will be smooth, but thick. Don’t over-mix the batter.
Add shredded carrots and lightly milk until combined.
Pour batter into the mugand microwave 1 minute 30 seconds.
For the Macro Friendly Carrot Mug Cake Icing:
Mix the greek yogurt and protein protein powder in a bowl.
Spread on top of the carrot mug cake and enjoy!
Tips for the perfect Carrot Cake Protein Mug Cake Recipe
This carrot cake protein mug cake is extremely easy, but here’s some tips to get it right!
Use freshly shredded carrots so you get a fresh flavor here!
Whisk dry ingredients well so that the batter is even!
Use room temperature Yogurt and Milk Microwave these too for about 5 seconds if you took them out of the fridge, otherwise they will make the coconut oil harden.
Don’t over-mix the batter! Make sure you gently fold the dry mix into the wet to combine them. If you over-mix it, the protein powder will make it tough, dense and gummy.
Grease the inside of the mug so the carrot cake protein mug cake to comes out easily when cooked
Let the mug cake cool slightly before frosting Or the frosting will melt on the cake!
How to Store Low Calorie Single Serving Carrot Cake
This low calorie single serving carrot is best had fresh, but you can definitely make it ahead of time for the week and have it when you prefer!
Store mug cake and frosting separately
Let the carrot cake protein mug cake cool completely
Cover the mug tightly with plastic wrap
Place in the fridge for up to 4 days
Refridgerate frosting in an airtight container separately
When consuming – reheat in the microwave for 15 seconds, and then top with frosting!

Protein Yogurt Frosting:
2tablespoonNon-fat Greek Yogurt, 28g
2teaspoonVanilla Protein Powder, 4g
Instructions
In bowl, combine protein powder, flour, baking powder, cinnamon and nutmeg.
Add in almond milk and applesauce; Mix until just combined.
Add grated carrots and fold to combine.
DO NOT OVER-MIX or protein powder and will make the cake dense.
Lightly grease a microwave-safe mug and pour batter in.
Microwave 1min 55sec. A toothpick inserted into center should come out dry.
For icing: In a small bowl whisk together Greek yogurt and protein powder.
Spread over cake and serve!
