Craving a hearty, but healthy lunch? Sausage Stuffed Sweet Potatoes will fill you up and keep you full of energy all afternoon. {gluten free, paleo, whole30}
Do you love sweet potatoes as much as I do? I have been obsessed with them lately in Paleo Quiche Cups, sheet pan dinners, chili and salads. They are so sweet and delicious and go well with so many different flavors.
Sweet potatoes are full of Vitamin A, Vitamin C and have anti-inflammatory properties. I like them because they help regulate blood sugar and they keep me full. They are perfect for weekly meal prep. Bake a bunch of them on Sunday and stuff them full of leftovers all week. Add greens like spinach, kale or mustard. Use proteins like sausage, chicken, steak or pulled pork. Top with a sprinkle of parmesan or feta if you so choose.

Ingredients
- 1 baked sweet potato
- 2 sausage links paleo approved if necessary, sliced
- 1 cup greens spinach, kale or mustard greens
- olive oil
Instructions
Heat 1 tablespoon oil over medium high heat.
Saute sausage for about 5 minutes or until you get some browning on each side.
Add spinach and stir for a minute or two until spinach begins to wilt.
Cut slits in sweet potatoes and fill with sausage and spinach.
Salt and pepper to taste.
