And they were all really surprised by how healthy and low calorie these peanut butter protein blondies were. In spite of all the peanut butter flavor and candy in there.

Ingredients for Peanut Butter Protein Blondies

These low fat and low calorie peanut butter protein blondies are made with a few healthy ingredients, and have no eggs, no oil, no extra sugar and gluten free too; The perfect vanilla protein powder blondie!

  • Vanilla Protein Powder needed for high protein blondies and also replaces most of the ‘sugar’. See below for details here.
  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Whole Wheat Pastry Flour – or a regular all purpose flour
  • 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free;  (code HAYLSKITCHEN for a discount here too)
  • Non-fat Greek Yogurt contributes to the oil-free part of these high protein low calorie protein blondies since it adds the moisture, and also extra protein 
  • Almond Milk or regular milk
  • Baking Soda
  • Creamy Preanut Butter

And optionally:

  • M&Ms
  • Reese’s Pieces!

What Protein Powder to use for baking High Protein Blondies

Baking with protein powder can be tricky, and the best protein powder I’ve found for this is a whey-casein blend; I used Vanilla protein powder from Quest Nutrition.

I haven’t tried Whey protein, pea protein or other plant based ones, so I can’t say how those would work here.

Be sure to use a vanilla protein powder sweetened with stevia or monk fruit if you want a proper sugar free blondie recipe.

How to make Healthy Peanut Butter Blondies with Protein Powder?

This recipe for healthy peanut butter protein blondies with protein powder is extremely easy to make; just mix and bake!

Here’s what it takes:

  1. Preheat your oven to 350°F and line a baking pan (about 8″) with parchment paper.
  1. Whisk all the dry ingredients in bowl: vanilla protein powder, flour, zero calorie sweetener, peanut butter powder and baking soda.
  1. Whisk the wet ingredients in a large bowl: Greek Yogurt and almond milk.
  1. Add the dry mix to the wet and gently fold to combine. Just be gentle and don’t over-mix the batter. The protein powder will make it too dense.

    You should have a thick batter. (Taste batter and add stevia powder if you want it sweeter)
  1. Add in m&ms and reese’s pieces and fold to combine. 
  1. Transfer the no sugar protein blondie batter into pan, top with more candy and bake for about 25-30 minutes.

How to know when healthy peanut butter blondies are ready?

Peanut Butter protein blondies are ready when the top is completely set and dry, and a tester (toothpick or thin sharp knife) comes out mostly dry.

For extra fudgy healthy peanut butter blondies, let some moisture be there on the tester – this should be at about 25 minutes.

Wait until cool!

Don’t cut too soon or the protein blondie squares will be too soft.

Why is this a low calorie protein blondie?

An average protein blondie recipe has about 100 calories, since they typically have added fat from nut butters, but this one has just 63 calories a piece without the mix-ins!

With no oil and no butter, these are actually the perfect low fat protein blondies!

Alternatives for Healthy Peanut Butter Blondies

For the perfect low fat but moist and healthy peanut butter blondies, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your recipe might turn out.

  • Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flout
  • Greek Yogurt: Coconut Yogurt
  • Almond Milk: Any other milk 
  • 1:1 Zero Calorie Sugar Replacement: Regular granulated sweetener (this won’t be sugar free though, and also higher in calories)
  • Peanut Butter Powder: Regular Peanut Butter, but reduce the milk to about ¼ cup (I haven’t tried this yet though)
  • Peanut Butter: Almond Butter, Sunflower Seed Butter, Hazelnut Butter or even Tahini

To make Vegan Protein Blondies

For a high protein Vegan blondies recipe, use coconut yogurt in place of Green Yogurt, dairy free chocolate and also a plant based protein powder.

How to store PB Protein Blondies?

This high protein pb blondie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!

Store peanut butter protein powder blondies at room temperature in an airtight container for 1-2 days or in the fridge for a week.

To freeze low calorie peanut butter blondies, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

Thaw before eating!

  • 2 tablespoon Zero Calorie Sugar, 24g
  • teaspoon Baking Soda
  • 1⅓ cup Non-fat Greek Yogurt, 300g
  • cup Unsweetened Almond Milk, 80ml
  • ¼ cup Peanut Butter, Blondie-flavor recommended, 56g
  • 28 g Reese’s Pieces
  • 28 g M&Ms

Instructions

  • Preheat oven to 350°F and line an 8″ x 8″ baking dish with parchment paper.

  • In a bowl, whisk vanilla protein powder, peanut butter powder, flour, zero calorie sugar replacement, stevia and baking soda.

  • In a large bowl, whisk together Greek yogurt and almond milk.

  • Add wet mix to dry, and peanut butter.

    Gently fold until combined.

  • Add most Reese’s pieces and M&Ms (reserving few for the top) and fold.

    Batter should be slightly thick.

  • Transfer batter into pan, spread evenly and top with remaining candy.

  • Bake for 25-30 minutes or until the top is set.

    Toothpick inserted into the center should come out mostly dry, still slightly wet.

  • Remove from oven and let cool completely.
