Why This Pea And Mint Soup Is Good For You

You may not think this soup recipe is a particularly inspiring or interesting recipe.

But did you know that peas have twice the protein of most vegetables?

Not only that they’re are also full of nutrients, their insoluble fibre aids digestion and is another step to helping to lower cholesterol.

And peas only have 81 calories per 100g serving!

Mint is good for the skin, is a great source of manganese, copper and vitamin C and is also attributed to helping to decrease the risk of colon cancer.

So you see mint isn’t just something to flavour this pea soup with!

Tips For How To Make Pea and Mint Soup

  • I use low calorie cooking spray to soften the onions but one tablespoon of olive oil can be substituted if you don’t have spray oil.
  • You can use any onions you have to hand or to use up. Spring onions, red onions or shallots will all give this soup a different unique flavour.
  • My pea soup is based on using frozen peas. But if you have fresh garden peas they would be wonderful in this recipe!
  • Do use fresh mint not dried mint. Otherwise you will not get the delicious fresh minty taste.
  • I puree my soup in order to get that fresh creamy texture. But you can eat it without pureeing it as long as you don’t mind a few soft peas in each mouthful you take.

You can easily adapt this soup recipe by adding little bits of any leftover gammon, making it a pea and ham soup!

I recommend a couple of slices of wholemeal bread to go with your pea and mint soup.

You can make sure you mop up every last drop of deliciousness from your bowl!

Ingredients

  • Low calorie cooking spray
  • 1 large onion , diced
  • 650 g frozen peas
  • 20 g mint leaves , stalks removed
  • 1 L vegetable stock
  • Salt and freshly ground pepper for seasoning

Instructions

  • Spray the bottom of a saucepan with the low calorie spray 5 times. Turn the heat on high underneath, then when the spray begins to bubble turn the heat down to medium.

  • Add the onion to the pan and sauté for about 5 minutes until soft. Stirring constantly and adding drops of hot water if the onions begin to stick to the pan.

  • Add the frozen peas, mint leaves and vegetable stock.

  • Bring the soup to the boil and then turn down the heat to allow the soup to simmer for approximately 20 minutes until the peas are fully cooked.

  • Blitz the soup in a blender / food processor until pureed.

  • Return to the pan and then season to taste.
