This Paleo Apple Breakfast Sausage is a great egg-free breakfast. Easy to make, flavorful, and so juicy. They are gluten free, dairy free, nut free, and so delicious!
I know cinnamon and turkey don’t seem like a natural fit, but please trust me and try it! I tried these many times with different spice combinations and this was the best one. Apple pie spice in used in these, but cinnamon will work the same. Apple pie spice has some other spices like nutmeg, ginger and cloves.
And since we’re putting cinnamon in turkey lets take it farther and talk about how good nut butter is on these!! Warm them up and top them with almond, cashew, or sunbutter. Wow- so, so good!
Nut Free and Egg Free Sausage
I know eggs can get old on a Whole30 and there are many people who can’t have eggs. These are such a great option to switch things up in the morning. Or if you’re not sick of eggs, these go great with them. Another bonus is they are nut free. Unlike meatballs that use almond flour and eggs, these are just mixed with the spices and baked. They don’t dry out at all and stay so juicy.
These are so easy to make with only 4 ingredients. The mixture is combined, pattied out into 8 patties and baked in the oven. It’s a perfect dish to be made ahead and enjoyed for a few days. You could easily double the batch if you want some for the whole week or have a big family.

Ingredients
- 1 pound ground turkey
- ½ apple, skin-on, grated (⅓ cup)
- ¾ teaspoon salt
- 1 ½ teaspoons apple pie spice or cinnamon
Instructions
Preheat oven to 350° and line a sheet tray with parchment paper. Set aside.
Add the turkey to a medium bowl and add grated apple, salt, and apple pie spice. Combine well until all the apple is mixed in. Divide evenly into 8 pieces and patty them out to ⅓ inch thick. Place them on the sheet tray and bake for 20 minutes.
Serve warm with nut butter if desired. Store leftovers in the fridge, covered.
