Coconut Water: Coconut water adds to the subtle coconut flavor.
Limes: A good squeeze of lime gives a nice zesty tang to these popsicles.
Agave Syrup: Agave syrup is optional in this recipe. I’d recommend using it if your mangos are not fully ripe and you need a bit more sweetness. You can also use maple syrup.

Peel the mangos and cut them into rough chunks. If you’re using frozen mango chunks, make sure they’re defrosted.
Put all the ingredients in the blender. Blend until the mixture is smooth and creamy.
Pour the mixture into the popsicle molds, insert the popsicle sticks and freeze for 4-6 hours. Popsicles made in larger molds will take longer to freeze than popsicles made in smaller molds.

What if your mango popsicles stick in the mold?
Run the popsicle mold under warm water for a few seconds. Hold the mold under running warm water, focusing the water on the outside of the mold where the popsicle stick is inserted. The warmth will help to slightly melt the outermost layer of the popsicle, making it easier to release from the mold.
