- 125 g (4oz) plain flour
- 1 pinches salt
- 1 egg
- 300 ml (10 fl oz (½ pint)) semi-skimmed milk
- 2 large mangoes
- 6 passion fruit
- 2 tsp. arrowroot
- 150 ml (5 fl oz (¼ pint)) pineapple juice
- juice of 1/2 lime
- 2 Tbsp. Malibu (optional)
- caster sugar
- vegetable oil for frying
- icing sugar for dusting
- Step 1
Blend the flour, salt and egg with the milk in a processor until smooth. Cover and set aside for 30min.
- Step 2
To make the filling, peel and slice the mangoes. Halve the passion fruit and remove the pulp. Mix the arrowroot with 30ml (2tbsp) cold water.
- Step 3
Place the pineapple juice in a small saucepan and warm gently. Stir in the arrowroot and bring to the boil. Remove from the heat and stir in the passion fruit pulp, lime juice and Malibu, if using. Sweeten to taste and set aside.
- Step 4
Lightly brush an 18cm (7in) nonstick crepe/pancake pan with oil and heat. When hot, add enough batter to coat the base of the pan thinly, about 45ml (3tbsp). Cook for about 3min or until golden brown, then toss or turn. Cook for a further 1-2min then transfer to a plate, cover and keep warm. Cook the remaining pancakes in the same way.
- Step 5
Fold the pancakes in half, fill with the sliced mango and then fold in half once again. Dust with icing sugar and serve with the warm sauce.
