Makhana chivda:
Heat 2 tbsp ghee or oil in a kadai.
Add the makhana and roast on low-medium heat. Keep stirring in between. Roast till makhana are crunchy.
Now add 2 more tbsp of ghee to the kadai and heat. Add the peanuts and roast till they turn golden brown and crisp. Remove.
To the same kadai add the cashews. Roast till golden. Be very careful as Cashews burn very easily.
Add one more tbsp of ghee to the same kadai. Now add curry leaves and green chillies.
Now add haldi and mix well. Add salt, sugar and chaat masala. Mix.
Now add all the roasted nuts. Mix well till all the makhanas are coated with the masala. You can also add a fistful of fried raisins/kismis. I am not very fond of it so I didn’t add.
Discard the green chillies. Let it cool completely before storing. Enjoy your healthy evening snack with your favourite cup of tea or coffee.
