These Low Calorie Pumpkin Cookies are just 41 calorie each (including the frosting) and are low sugar and low carb too! The best thing about these healthy pumpkin cookies, is that they take less than 15 minutes to make.
Ingredients You’ll Need:
1 cup all-purpose flour (or Gluten Free Flour)
⅔ cup Zero Calorie All-Natural Brown Sugar (see recipe card)
½ teaspoon baking soda
⅛ teaspoon salt
½ teaspoon pumpkin spice blend
¼ cup pure pumpkin puree
⅛ cup water
1 cup Low Calorie Cream Cheese Frosting (recipe below)

Meal Prep: You can make the healthy pumpkin cookies ahead of time and bake completely then cover and store for later. You can also store unbaked just cover the batter, and store for later. Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).

I used a zero calorie (all-natural!) sweetener in place of sugar, though you can swap it out for brown sugar, coconut sugar, date sugar, or monk fruit.
Special Tip: To make these Pumpkin Chocolate Chip Cookies swap out the frosting for 1/2 cup semi-sweet chocolate chips and mix them into the batter.

Preheat oven to 325 degrees and line a baking sheet with parchment paper.
To a large bowl combine the flour, sugar, baking soda, salt, and pumpkin pie spice. Mix well.
In a separate bowl combine the pumpkin puree, water. Whisk together.
Pour the wet ingredients into the dry ingredients and mix together until just combined.
Scoop out 16 cookie balls and place on the prepared baking sheet.
Wet your hands a little and then press the cookies down a bit to form cookie rounds.
Bake for 7 minutes, then remove from the oven and let cool completely on the baking sheet (they will continue to cook on the sheet while they cool.)
Once completely cool, smear 1 tablespoon of frosting on each and a dash of pumpkin pie spice.
