Potato salad is a great addition to so many meals, its great with salads and is a perfect side for a BBQ or party spread. Potato salad consists of boiled potato, herbs and usually has a creamy base such as crème fraiche, yogurt or mayonnaise. I love potato salad made with crème fraiche but its probably the most unhealthy way to make potato salad, so I’ve made a low calorie potato salad recipe that’s just as yummy and indulgent as the recipes you’ve used previously. It’s super simple and takes just 20 minutes to make. This is a healthy potato salad recipe for weight loss

Alright, let’s spill the beans on potato salad and weight loss. The answer? It totally can be! In this recipe, we’re doing it right by ditching the heavy mayo for a mix of fat-free Greek yogurt and just enough mayo for that creamy goodness. Potatoes, when not drowned in heavy dressings, bring some hearty goodness with fibre to the table, helping you stay satisfied. We’re throwing in spring onions and chives for flavour without overdoing it on salt or calorie-packed toppings. So, is potato salad healthy for weight loss? Heck yeah, as long as you keep an eye on portions and team it up with a balanced plate. Dig in without the guilt! This is a healthy potato salad recipe for weight loss

Step 1: Boil potatoes

Firstly, peel your potatoes and chop them into small chunks around 1 inch or less. I would recommend smaller new potatoes for this recipe as I find they generally stay firmer than larger potatoes that are used for baking and roasting but if larger potatoes are all you have they will work too, just check them several times whilst cooking to make sure they don’t get too soft. Place your potatoes in a saucepan with boiling water and boil them for about 15 minutes until cooked. You want them to be cooked but still firm enough to pick up with a fork without it crumbling.

Step 2: Create the potato salad

Once your potatoes have cooked, drain the water away and let them cool, if you don’t have time to let them cool naturally you can run them under cold water for 5 minutes whilst still in the colander. Pop them in a large bowl and add 4 chopped spring onions (or 1-2 larger salad onions) and roughly 2 tablespoons worth of finely chopped chives.  Add in 2 tbsp light mayo and 6 tbsp of fat free greek yogurt (unfavoured) along with ¼ tsp of garlic powder and a pinch of salt. Mix all the ingredients together well and serve along with other sides and salads.
