Ingredients You’ll Need

  • 1 (14-oz) block Extra Firm Tofu
  • ⅛ cup low-sodium soy sauce (or gluten free Tamari)
  • 1 tablespoon honey (or maple syrup for vegan)
  • ½ tablespoon light brown sugar (low sugar tips in recipe card)
  • ½ tablespoon rice vinegar
  • ¼ teaspoon toasted sesame oil
  • 2 teaspoons fresh ginger
  • 2 cloves of garlic

Healthy Grilled Tofu Meal Prep and Storage

Meal Prep: You can meal prep 2 ways. You can cook the healthy tofu skewers completely then store for later, or add the ingredients to a bag, mix and add to the freezer for later. 

Storage: Will hold in the fridge for 5 days and the freezer for a month.

Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes)

Special Tip: If you can’t find extra firm tofu, use a Tofu Press to get the same consistency.

  • 3 Skewers (metal or wooden)

  • 1 (14-oz) block Extra Firm Tofu

Teriyaki Marinade:

  • cup low-sodium soy sauce or gluten free Tamari
  • 1 tablespoon honey or maple syrup for vegan
  • ½ tablespoon light brown sugar packed
  • ½ tablespoon rice vinegar
  • ¼ teaspoon toasted sesame oil
  • 2 teaspoons fresh ginger grated or minced
  • 2 cloves of garlic grated or minced
  • If using wooden skewers, soak for 1 hour in water to stop them from catching fire on the grill.

  • Preheat the grill to high heat.

  • Meanwhile, make the marinade by combining the ingredients in a large bowl. Whisk well and set aside.

  • Drain the tofu and slice into 3 portions. Then cut those 3 portions into cubes.

  • Add the tofu cubes to the marinade and gently toss.

  • Add the tofu to the skewers, and reserve the remaining marinade for brushing the skewers on the grill.

  • Grill the skewers for 10-15 minutes, turning and brushing with more marinade until all sides are caramelized.

  • Serve hot with your favorite grilled side dishes, or these Low Calorie Grilled Sides.

Low Sodium Tips: Make sure to get low sodium soy sauce. You can also omit it from the recipe and use lemon juice instead to cut sodium.
