Heat a large skillet over medium-high heat, add in the ground chicken. Break it up with a wooden spoon. When browned and crumbled, drain any fat and start adding the remaining ingredients.
To the chicken, add the green onions, ginger, garlic, cabbage and carrots. Cook, stirring occasionally, until the cabbage is tender, about 5 minutes.
Stir in soy sauce and sesame oil and cook for 1 minute.
