How to separate egg whites and yolks?
Eggshell Halves: Use the eggshell halves to transfer the yolk back and forth, letting whites fall into a separate bowl.
Plastic Bottle Suction: Squeeze a plastic bottle, touch the yolk, and release to suction it out from the whites. Personally, I find this the easiest way to separate yolks.
Patience: Fresh eggs with firmer whites make separation easier. Room temperature eggs flow better. Careful cracking avoids broken yolks which will be almost impossible to separate
How to make low calorie chocolate mousse?
Check out the super easy steps below to make this quick and easy healthy dessert:
Step 1: Whisk the egg whites
Let’s kick off our Low Calorie Chocolate Mousse journey with the art of whisking egg whites into a silky texture, forming peaks that promise a light, indulgent delight in every spoonful. This meticulous step is crucial, setting the foundation for the ethereal texture that defines our heavenly mousse.
Step 2: Melt chocolate
Now, let’s gently melt the dark chocolate into a smooth liquid in a double boiler. Imagine a heat-proof glass Pyrex bowl over simmering water, signalling its readiness for the upcoming phase of our chocolatey venture. Set the melted chocolate aside, it needs to cool slightly before the next step as not to curdle the yogurt. I find when I use a Pyrex bowl, once I can hold the bottom without it being too hot then its cool enough for the next step.
Step 3: Adding yogurt
Enter a key player – fat-free honey-flavoured Greek yogurt – into the melted chocolate. Stir diligently for a seamless blend; alternatively, if you don’t have access to honey flavoured fat free Greek yogurt, consider a swap with 40g fat free yogurt and a dollop of honey. This addition introduces a delightful creaminess, elevating the mousse’s overall experience along with adding a little extra sweetness in a healthy way without the use of ultra processed sugars.
Step 3: Loosening the chocolate
Next once your chocolate and yogurt is well mixed, take a 1/3 of the whisked egg whites and mix them into the chocolate, they don’t need to be carefully folded, just mixed until, well, mixed. This step, aptly named “loosening the chocolate,” thins out the chocolate and sets the stage for a smooth fold, ensuring that the mousse retains its light and airy quality. This careful process contributes to the indulgent texture that awaits.
Step 4: Fold in the egg whites
Finally, the pivotal moment arrives as the remaining whipped egg whites join the chocolate mixture. It’s a meticulous fold, a delicate dance of ingredients, preserving the ethereal fluffiness that sets our mousse apart. Carefully dump your egg whites on top of the chocolate mousse mixture and then use your spoon to fold the egg whites into the chocolate, scraping the chocolate mousse mixture from the sides and bottom of the bowl as you go. This crucial step ensures that each spoonful is a symphony of decadence, with a texture that’s both rich and airy. No rough handling here – just a gentle integration that maintains the mousse’s heavenly consistency. You will loose some volume but don’t worry, it will set in the fridge and be just as bubbly as its supposed to be.
Step 5: Portion and set
With the mousse mixture now perfected, it’s time for the finishing touch. Carefully transfer this divine concoction into four ramekins, creating individual servings of indulgence. Place them in the refrigerator for a minimum of 3 hours, allowing the mousse to set and reach its peak flavour and texture.
As the timer ticks away, the anticipation builds for the moment you can finally savour the fruits of your labour. Picture yourself retrieving those chilled ramekins, each holding a portion of the velvety, low-calorie goodness you’ve crafted. Spoon in hand, get ready to experience the blissful combination of silky chocolate and airy perfection – a healthy recipe that crowns your culinary journey. Enjoy every delightful bite of your homemade Low Calorie Chocolate Mousse!

FAQ
Is there a substitute for egg whites?
Unfortunately, this recipe relies on the unique properties of egg whites. Stay tuned for an upcoming “avocado chocolate mousse” recipe, offering a delightful egg-free alternative.
Can I freeze this dessert?
Freezing is not recommended for this delicate dessert, as it may alter the texture and compromise the airy consistency that defines a perfect low-calorie chocolate mousse.
What should I do if my egg whites aren’t forming stiff peaks?
Achieving stiff peaks is crucial for the mousse’s texture. Ensure your egg whites are at room temperature, and the mixing bowl is clean and free of any grease. You will need to use an electric whisk for this recipe, hand whisking wont be sufficient.
Do I need to melt the chocolate using the double boiler method?
While a double boiler is recommended for melting the chocolate gently, you can also use a microwave with short intervals, stirring between each, to avoid overheating.
How long can I store this chocolate mousse?
The mousse can be prepared in advance and stored in the refrigerator for up to 3 days. However, for the best texture and flavour, it’s recommended to enjoy it within the first day.
Can I make this mousse without honey flavoured yogurt?
Absolutely! Feel free to use plain Greek yogurt and add a touch of honey to achieve the desired sweetness. This customization allows you to tailor the mousse to your taste preferences.
What can I do if my mousse doesn’t set in the fridge?
If the mousse doesn’t set within the recommended time, it is likely that you’ve been too vigorous whilst folding and have lost the air in your whisked egg whites. This means they wont set and will stay at more of a pudding consistency.
