You would think with my brand and logo, Health Beet, that I would be all about beets!

Truth is, I’m not a fan of beets. When we were creating the brand and logo, we just loved the idea of Health Beet, because it felt like a perfect intersection between healthy food and the latest in nutrition news.

So, here’s my attempt to provide some ideas for beet recipes. A beet hummus for you to try!

Beet hummus recipe with salt on top

I’m wanted to make a low calorie hummus, that didn’t involve chickpeas. Sometimes chickpeas can be a bit gritty if your food processor isn’t strong enough.

So, I just left them out altogether, and simply used the beets and tahini paste (or sesame seed paste) to make this spread.

I first peeled and boiled the beets. This was similar to peeling and boiling potatoes, but a lot messier!

I also used lemon juice, cumin, garlic, salt, and pepper to add a punch of flavor.

For 2 tablespoons of the beet hummus, it’s only 20 calories, 1 gram of protein, 2 grams of carbs, and 1 gram of fat.

You could spread it on low calorie bread, toast, pita bread, crackers, or a low calorie tortilla.

What would you do with this beet hummus?

  • 2 medium beets, cooked and cubed
  • 1 tablespoon sesame seed paste
  • 1 teaspoon minced garlic
  • 2 tablespoons lemon juice
  • 1 tablespoon ground cumin
  • 1 dash salt
  • 1 dash pepper
  • Peel and chop beets. Place in a small pot of water, and boil for about 15 minutes, or until beets are soft.

  • Drain water and add cooked beets to a food processor. Add all remaining ingredients to food processor and blend until smooth.

  • Use beet spread for toast or a dip.

Serving: 2tablespoons | Calories: 20cal | Carbohydrates: 2g | Protein: 1g | Fat: 1g
