If you’re craving something sweet AND want to hit your protein goals, I’ve got the perfect treat for you. This apple pie cheesecake is great all year round, but the flavors of the baked apples is especially wonderful around the holidays.

This was inspired by my pumpkin cheesecake bowls, and is such a healthier swap for my decadent apple crumble pie.

Hint: If storing in the fridge for a few days, I like to top with the cooled apples BEFORE refrigerating. I crumble on the graham crackers right when I’m going to eat it so they stay crispy and crunchy.

Storage

This recipe makes 4. I love to store the cheesecakes with the cooled apples on top in the refrigerator covered with a lid. I’ll crumble on the graham crackers before serving so they stay crispy. Good for a week in the refrigerator.

Sadly, the cottage cheese doesn’t stand up well to freezing, and gets a bit lumpy when thawing. I don’t recommend freezing.

Top Tip

I feel like the flavor gets even better if these are able to sit in the fridge for a day! If making for a crowd (or yourself!), definitely make in advance and refrigerate until serving.

Ingredients  

  • 2 medium granny smith apples, peeled and chopped
  • 1 teaspoon cinnamon
  • ¼ teaspoon kosher salt
  • 2 cups Low Fat Good Culture Cottage Cheese
  • 1 cup nonfat, plain greek yogurt
  • 1 scoop vanilla protein powder , code LOVELY15 for 15% off
  • 8 Simple Mills Sweet Thins gluten free graham crackers

Instructions 

  • Bake The Apples by placing them in a baking dish, sprinkling on the cinnamon and salt, tossing to coat, then bake at 375ºF for 30-45 minutes until soft and golden brown. Allow to cool completely.

  • Make The Cheesecake by combining the cottage cheese, greek yogurt and vanilla protein powder in a food processor. Blend until completely smooth.

  • Assemble The Cheesecakes by diving the cheesecake mixture between 4 mason jars, and top with ¼ of the cooled, baked apples. You can top with lids at this point, and store in the fridge for up to 1 week. Or enjoy right away! Before eating, top each cheesecake with 2 crumbled gluten free graham crackers to be the “crust”.

Cottage Cheese – The best cottage cheese is by Good Culture. I love their low fat, either Simply or Organic if you can find it. It gives the best final texture. My 2nd favorite brand is Daisy. Other cottage cheeses tend to be more watery and don’t work well for a cheesecake consistency.
