I replaced the tomato and the salad leaves with thinly sliced mushrooms. When the flatbread was heating I griddled the mushrooms and then as I turned them I put them inside. Also used grated cheese so I could use less then I added mozzarella
Mixed baby salad leaves work great
I used wholemeal flatbread thins and also used mixed baby salad leaves (as I forgot to get watercress) and they taste amazing. Thin sliced red pepper would also be a great addition.
