I dont really know where this concept came from, but this recipe totally worked out.
Well I’ve had a normal chicken crust pizza before – this was from a brand Real Good Foods – so may be I just had that concept on my mind?
So when it was time to plan my next meal prep dinner, I thought of sneaking in some veggies into this recipe too.
Mashed up a chicken crust and a cauliflower crust to make tis chicken and cauliflower pizza crust. Totally worked!
Ingredients for Cauliflower Chicken Crust Pizza
The name might sound fancy, but this healthy protein pizza crust is made with just fresh chicken (not canned), cauliflower and a few other pantry staples – no flour or oil needed.
Cooked Chicken Breast – I just baked about 1 lb raw chicken breast to get this
Cauliflower Florets
Grated Parmesan
Shredded Mozzarella – I would recommend a reduced/low fat version, but a regular would work too.
Eggs and an Egg White
Minced Garlic – Either fresh or store bought
Italian Seasoning or other dried herbs like Oregano or Parsley
Pepper
Keto, Protein, Low Calorie Pizza Crust with Fried, Pounded, Canned or Ground Chicken
I made this chicken pizza crust recipe with cooked chicken, but you have options to also use either canned, fried, pounded or ground chicken too.
To make pizza crust with canned chicken, place chicken on baking sheet to dry out and follow the recipe exactly as described.
For ground chicken, first cook the chicken completely in a bit of water on the stovetop, then dry out on the baking sheet and continue.
For a fried or pounded chicken pizza crust, this would be a recipe where you have just a pure chicken-only crust where you pound the chicken super thin with a meat hammer, then cook it and add your toppings. Alternatively, you can also do this as cook the chicken and then maybe shred, dry and follow this recipe with the cauliflower addition.
What is the difference between Keto crust and Cauliflower Crust?
A keto crust is given its name because it has very low net carbs in a serving size, whereas a cauliflower crust is just one that has the vegetable in it; and this pizza crust with chicken is both! Most store bough cauliflower crusts actually use some form of flour which make it not suitable for the keto diet.
This cauliflower crust has no flour in it, and uses chicken, cheese and eggs for protein and as a binder, so is the perfect keto pizza crust recipe.
How to make Keto Protein Pizza Crust with Chicken and Cauliflower
The process might seem long, butt his low calorie pizza crrust is also low effort – just prep the chicken, the cauliflower, use that food processor and bake!
Prep Chicken:
Chop and process chicken in food processor until ground
Spread on baking sheet and bake 10-12 minutes to dry out – shaking halfway.
Prep Cauliflower:
Pulse cauliflower in food processor to make cauliflower rice.
Place in bowl and microwave 10 minutes till soft. Cool a bit.
Wrap in dishtowel or cheesecloth and squeeze out as much moisture as possible.
Prep Caulifwer Chicken Pizza Dough
Process chicken, cauliflower, parmesan and mozzarella cheese, eggs, egg white, Italian seasoning, galic and pepper in food processor (to make dough).
Place clump of dough (⅙) on parchment paper, flatten, add another piece of parchment paper on top and roll with rolling pin.
Bake:
Transfer to baking sheet (bottom parchment on), remove top parchment piece, and bake 20-25 minutes.
Add toppings and bake another 5-7 minutes.
Make Ground Chicken Pizza Crust in the Air Fryer:
To make this protein chicken pizza crut in the air fryer, cook the crust for about 17 minutes at 400°F, then add your toppings and cook another 5-7 minutes.
The air fryer – and oven – option work great for a ground chicken margherita pizza, but might be a little different if you add toppings that might fly around.
Tip: Don’t add spinach or similar greens on top since they will dry out and wilt when cooking in the air fryer.
Tips to make the best cauliflower chicken pizza crust:
Tear the chicken fine in the food processor to prevent large chunks.
Dry out the cooked chicken to remove excess moisture, so the crust binds well.
Make sure to get all the moisture/liquid out of the cauliflower – or the crust will get soggy and not hold.
Use a food processor to combine ingredients and form a dough; This will ensure a uniform crust.
Don’t roll the crust too thin or it won’t hold well.
How to Store Homemade Chicken Pizza Crust
To store this keto chicken crust pizza, let it first cool to room temperature.
For storing in the fridge, place chicken crusts in an airtight container for 2-3 days. When cooking, add toppings and bake for 7-8 minutes.
Chicken Cauliflower pizza crust is freezer friendly too; Stack crusts with pieces of parchment paper in between, place in freezer safe bags and freeze up to 3 months.
To cook, first bake at 400°F for about 5 minutes, then add toppings and bake another 5-7 minutes.

¾lbCooked Chicken Breast, 340g, about 4¼ cups
7cupsCauliflower Florets, 750g
½cupGrated Parmesan, about 40g
¼cupShredded Mozzarella, 28g
2Eggs
1Egg White
2teaspoonMinced Garlic
2teaspoonItalian Seasoning, or other Dried Herbs
½teaspoonBlack Pepper
Instructions
Preheat oven to 400°F.
Chop chicken breast, place in food processor and pulse until torn and ground.
Spread on baking sheet and bake for 10-12 minutes to dry out (shake half way). Let cool slightly.
Place cauliflower florets in food processor and pulse to form rice. Transfer to large bowl and microwave 10 minutes until tender. Let cool slightly.
Wrap in clean dish towel/cheesecloth, and squeeze out as much moisture as possible.
Combine dried chicken, cauliflower, parmesan cheese, mozzarella cheese, eggs, egg white, garlic, seasonings and pepper in food processor and process to form a damp dough.
Or mix in a large bowl.
Line workstation (or pizza peel) with parchment paper, place a clump of dough on top and flatten with hands. Cover with another piece of parchment paper and roll – with rolling pin – to flatten to about ⅓” thick, 7″ wide.
Transfer pizza crust to baking sheet (with bottom parchment on) and remove top parchment paper piece.
Repeat with remaining dough; You should get about 6.
Bake crust for about 20-25 minutes until golden brown.
Freezer: Stacked between pieces of parchment paper. To cook, bake in preheated 400°F oven for about 5 minutes, add sauce/toppings and bake another 5-7 minutes.
