Okay, guys, I’m going to blow your mind with this salad recipe today! I think Broccoli Peach Salad is my F-A-V-O-R-I-T-E broccoli salad recipe! No kidding. It is filled with crunchy veggies, sweet fruit, and even uses a healthy homemade dressing (i.e., no mayo or Miracle Whip!). While I used bacon in the recipe, I tried to use one without nitrates. You can substitute turkey bacon if you prefer. This salad just smacks of flavor and is quite filling too.
Back in September I brought this salad with me to a friend’s house for lunch. I wanted to pray with her after breast cancer surgery and before she would subsequently undergo radiation therapy. This recipe makes a good bit of salad, but I think both of us enjoyed it so much we ate two humongous plates of Broccoli Peach Salad! While I love Broccoli Salads, adding the peaches to it was ingenious in my opinion. I recently made one with apples that turned out terrific, but this one is based on my Healthy Broccoli Salad, which has been my go-to Broccoli Salad recipe for years. I took a few things out, added a few things, and left out the mayonnaise entirely substituting Greek yogurt instead. I tell you, this had to have been one of the BEST salads I’ve ever made. Peaches make this salad glorious!
Broccoli Peach Salad is also incredibly easy to make. The dressing only uses three ingredients: Greek yogurt, honey and apple cider vinegar. A little mix with the whisk and all of about 60 seconds of time and it’s done! I don’t peel the peaches either, so that also saves time in preparing the basic salad ingredients. All in all, this salad only took me about 10 minutes to make. Like I said, quick and E-A-S-Y!
If you’re looking for a great salad to make during the late summer-early fall period when peaches are in season, this is a great salad to take to potlucks, backyard barbecues, family reunions or any time you want a delicious tasting salad. It’s a great way to get your kids to eat their broccoli, too! 🙂
Broccoli Peach Salad is the BEST Broccoli Salad recipe I’ve ever eaten.
Every bite of this salad was so delectable.
My friend and I enjoyed this salad so much we had two plates of it!
Here’s what I did.
I used these ingredients for the salad plus bacon.
Place all the ingredients in a large salad bowl.
I used these ingredients for the salad dressing.
Whisk or stir ingredients with a spoon.
Just before serving toss salad ingredients with dressing. Or you can refrigerate for a couple of hours before the broccoli gets soft.
Garnish with extra peach slices or strawberries before serving, if desired.
Serve in bowls as a side salad, or on huge, salad plates as a main course for lunch.

SALAD:

1cupred grapesor green grapes, sliced in halves
1cupcraisins
1cuppecan pieces
1/3cupred onionchopped
4-6slicesbaconfried crisp and broken into small pieces
GREEK YOGURT DRESSING:
1cupplain Greek yogurtor use Icelandic yogurt
1/3cuphoney agave syrup or granulated sugar
2tbsp.apple cider vinegar
SALAD:
Layer salad ingredients in serving bowl.
Refrigerate until ready to serve.
GREEK YOGURT DRESSING:
Combine salad dressing ingredients in a small bowl with a whisk and refrigerate until ready to serve.
Add Greek Yogurt Dressing just before serving to keep vegetables crisp.
NOTE: While it is best to not add the dressing onto the salad until just before serving, you can also mix the salad together and refrigerate for a couple of hours without the veggies becoming too soft.
NOTE: For a clean eating recipe, be sure to purchase bacon without nitrates and with the least amount of processing possible.
NOTE: I have not tried this recipe with monk fruit sugar, but that may also work if you’re trying to stay away from sugar.
