When I was doing the Michelle Bridges 12 week challenge (I put on A LOT of weight on a 5-week trip to Europe), one of my favourite recipes was the low calorie banana bread.

It didn’t taste exactly like the full-fat version but it was close enough and I was ‘allowed’ it so I was happy.

Fast forward a few years and I had a hankering for recreating it long after losing the recipe. Enter… my own version.

The texture is quite wet and not at all cakey like regular banana bread, probably because there’s no butter or oil, but that’s the only way this differs from the original.

I added just enough spice to give it that lovely warmth and you won’t even notice that there’s no sugar. The honey, apple sauce and banana are all the sweetness you’ll need.

Ingredients in Healthy Banana Bread With Oats

Honey, bananas, jar of apple sauce, bowl of blueberries, measuring cup of oats & flour and 2 eggs for making healthy banana bread with oats.

To make Healthy Banana Bread you will need:

  • Bananas (shock!) – nice and ripe. Basically as ripe as you can get them before they turn to liquid.
  • Oats – Plain rolled oats. Don’t use quick oats. Alternatively, use all wholemeal flour (replace plain flour & oats)
  • Apple sauce – a little trick for this one is to buy the baby food pouches of apple puree.
  • Blueberries – fresh or frozen work just as well. Feel free to use other berries or even replace them with walnuts or chocolate chips (although will obviously reduce the ‘health’ part).

How To Make Healthy Banana Bread With Oats

Step 1 – Grease and line a loaf tin with baking paper.

Step 2 – Place eggs and honey in the bowl of an electric mixer and beat until thickened.

Step 3 – This is how it will look once it’s frothy.

Step 4 – Add the spices and apple sauce and beat them through.

Mashed banana with baking soda added.

Step 5 – Mash the banana and add the bicarb to it.

Step 6 – It will froth up like this.

Step 7 – Add the banana/bicarb to the mixing bowl and beat it through.

Step 8 – Add the remaining ingredients and gently mix them through.

Step 9 – Spread the batter into the prepared baking tin and bake for 30-35 minutes at 180C fan-forced.

Step 10 – Test with a cake tester (it will come out clean when it’s baked).

Step 12 – Transfer the banana bread to a wire rack to cool completely.
