A simple rustic recipe, we’ve packed this dish with juicy, sweet cherry tomatoes and herbs for a Mediterranean flavour. We’ve used salty reduced fat feta cheese to help reduce the calories and balance the acidity of the tomatoes.

As an added bonus, it looks fantastic on the plate because it’s so bright and colourful!

Fresh and nutritious Baked Feta and Tomatoes can be served as a starter alongside a wholemeal roll to mop up any leftover tomatoey juices, or for 4 people or as part of a more traditional mezze style meal where a selection of small plates are served.

I have cooked this many times as it’s a quick flavoursome dinner. I’ve used dried herbs as well as fresh and would say fresh is far better. I’ve also used low fat salad cheese instead of feta and works equally as well.
