Can This Recipe Be Adapted?
Absolutely! This stew is incredibly versatile – here are a few easy ways to adapt it to suit your preferences, dietary needs, or what you’ve got in the fridge:
Make It Vegetarian or Vegan
Swap the chicken for tinned chickpeas, butter beans, or chunks of butternut squash.
Use vegetable stock instead of chicken stock.
Choose a plant-based peanut butter (most are) for a fully vegan dish.
Adjust the Spice
Like it hotter? Add more chilli flakes or stir in a chopped red chilli for extra heat.
Prefer it mild? Skip the chilli flakes altogether – it’s still packed with flavour.
Switch Up the Protein
Use chicken breast for a leaner option with fewer calories.
Turkey thigh or breast also works well as an alternative.
You can even try lean pork or lamb if you’re feeling adventurous.
Don’t Have Sweet Potato?
Regular white potatoes or even carrots can be used instead.
Butternut squash also works beautifully for that slightly sweet, tender bite.
Add More Speed Food
Throw in some bell peppers, courgette or even some spinach.
