    Wet Ingredients

    • 1 Large Egg
    • 3 Tablespoons Unsalted Butter, Very Soft or Melted

    • Marinate the chocolate chips, candied citrus peel, and blanched sliced almonds in dark rum, fresh-squeezed orange juice, or water for at least an hour or overnight, so all the liquid is absorbed.

    Make the Stollen Dough

    • Combine the almond flour, sugar (or a zero-calorie sugar replacement such as monk fruit), salt, cinnamon, cardamom, nutmeg, and optional xanthan gum in a large mixing bowl.

      TIP: Be sure to use level teaspoons of the spices.

    • Add the egg, soft butter, vanilla, and lemon or orange zest. Mix into a smooth dough and form a dough ball in the bowl.

    • Drain any remaining liquid from the chocolate chip mixture. Then fold the chocolate chip mixture into the dough.

    • Using your hands or a spatula, shape the dough into a loaf in the bowl. If the dough sticks to your hands, lightly wet them.

    Transfer the Chocolate Chip Stollen to Parchment Paper and Bake

    • Put some parchment paper on a baking sheet.

    • Put the Stollen loaf on the parchment paper.

    • Poke the chocolate chips into the dough so the dough covers them. Otherwise, they may burn or fall off.

    • Bake the cake at 350℉ (180℃) degrees for 20-25 minutes or until lightly golden brown.

    Add the Chocolate Glaze

    • Leave the Chocolate Chip Stollen on the parchment paper while it cools so it doesn’t break.

    • Once cool, place the Stollen on a wire rack or serving platter. Then, pour the melted chocolate bar over the Stollen and let it set.

      NOTE: If you use a serving platter, chocolate will pool and harden on the sides.

    • When serving, use a hot Chef’s knife to slice through the chocolate shell without cracking it.
