Why This Sugar Free Pecan Pie Is So Healthy

You’re probably wondering what’s in this low carb pecan pie recipe. Well, I’ll tell you.

Low Carb Almond Flour Pie Crust Cradles This Keto Pecan Pie

Unlike traditional pie crusts made with high-carb all-purpose flour, this pie crust uses delicious, low carb almond flour. The result is a tasty Sugar-Free Almond Flour Pie Crust.

With a glycemic index below one, almond flour won’t spike blood sugar or elevate glucose levels. This makes the gluten-free pie an excellent option for anyone following a diabetic, low-carb, or keto diet.

You can also make the crust with avocado oil instead of butter, significantly reducing the saturated fat.

Unlike Regular Pecan Pie, the Sugar Free Pecan Pie Filling Is Naturally Sweetened with Monk Fruit

This sugar-free pecan pie recipe is made with zero-calorie golden brown monk fruit sweetener. If you’re unfamiliar with monk fruit, it’s a natural sugar alternative that leaves no aftertaste.

The best part? Monk fruit tastes so much like sugar that no one will realize they’re enjoying a sugar-free dessert. And, as an added bonus, your pecan pie will be completely free of sugar’s extra calories. Sweet, right? 😊

This is a great recipe for friends and family with dietary restrictions. After all, it’s gluten-free, low carb, and suitable for paleo, keto, and diabetic diets.

Avocado Replaces Most of the Butter in This Sugar Free Pecan Pie Recipe

Lastly, I avoid using large amounts of butter and corn syrup in my baking. Instead, I use an ingredient that might sound unusual: puréed avocado. If you haven’t tried baking with avocado yet, you’re in for a delightful surprise!

Avocados aren’t just a healthier alternative to butter with far less saturated fat. They also make cake batters, pie fillings, and frostings incredibly moist and silky.

In my opinion, avocados are the ultimate dairy-free, paleo-friendly butter substitute.

There are so many delicious avocado-based desserts to explore!

Ingredients in Keto Pecan Pie for Diabetics

This sugar free, diabetic pecan pie features a tasty, low-carb Almond Flour Pie Crust.

Ingredients in the Almond Flour Pie Crust

  • Almond Flour: Fine, blanched almond flour.
  • White Sweetener of Choice: I use white monk fruit sugar, a sugar-free sweetener.
  • Salt: To enhance the flavor.
  • Avocado Oil or Butter: You can make a buttery crust or use avocado oil as a delicious alternative. It also has a lot less saturated fat than butter and works beautifully in this crust recipe.
  • An Egg: Helps bind the crust.
  • Vanilla Extract: For additional flavor.

Ingredients in the Sugar Free Pecan Pie Filling

  • Puréed Avocado: This recipe is sweetened with brown monk fruit, and puréed avocado replaces the corn syrup usually found in pecan pie. Yes, it sounds weird, but you can’t taste the avocado at all.
  • Unsalted Butter: Only 2 tablespoons in the diabetic pecan pie filling.
  • Eggs: Room temperature eggs (leave them out for 15 minutes beforehand) add creaminess to the filling. They also provide structure to the sugar-free pecan pie.
  • Brown Sweetener of Choice: I use a brown sugar substitute such as Lakanto golden monk fruit sweetener or Swerve brown zero calorie sweetener.
  • Maple Syrup or Additional Monk Fruit: Maple syrup brings a deep, caramel-like sweetness to pecan pie, complementing the nuttiness of pecans.
  • Pecans: Chopped pecans or pecan halves are, of course, the star ingredient.
  • Cinnamon: Adds warmth and depth
  • Vanilla: Amplifies the sweetness and complements the nuttiness of the pecans and caramel notes in the keto pecan pie filling.
  • Salt or Sea Salt: Intensifies the sweetness and brings out the richness of the other ingredients.

Optional Topping and Decoration

  • Extra Pecans: Create a design or just scatter some on top.
