Today, I have a guest recipe from Bianca Slade at Wholefood Simply. Bianca’s whole food recipes, and in particular her sweet treats and desserts, are well known for their simplicity and ease to prepare, without sacrificing the flavour. She is sharing her lovely and easy coconut rough slice recipe, which is a great lunch box slice for kids as it doesn’t contain any tree nuts and is so easy to transport. I am sure that adults will enjoy it just as much.

As you will see, it takes little to no time to make and only requires 4 ingredients.

Ingredients For Coconut Slice

Shredded coconut – also known as desiccated coconut, it is used as the bulk of the recipe and gives this slice that rough texture. Make sure to use unsweetened shredded coconut! 

Cacao – you can use cacao or cocoa powder for this recipe; only a little bit is used to give it a hint of chocolate flavour. Raw cacao powder has more health benefits (antioxidants, magnesium) so it’s preferred but is not essential.

Dates – Medjool dates are used for a little sweetness. They also add that lovely caramel flavour to this slice. 

Coconut cream – this is the thickened part of the coconut milk from a can. You can also buy ready coconut cream but if you’re using coconut milk, simply put the can in the fridge for an hour or so and the cream will set at the top. Open the can without shaking it! Coconut cream adds some moisture and helps to bind the mixture.

Coconut Rough Recipe (Paleo, Vegan, Nut-Free)

This simple, healthy coconut slice is made with shredded coconut, cacao, dates and coconut cream. It’s tree nut-free, raw, vegan and paleo-friendly. Perfect for lunchboxes and as a little treat.

  • 2 cups desiccated coconut unsweetened!
  • 1 heaped tablespoon raw cacao powder cocoa/carob work as well
  • 10 Medjool dates seeds removed
  • 2 tablespoons coconut cream
  • Place all of the ingredients into your blender or food processor.

  • Blend until well combined – this may take a little while.

  • Press the mixture into a loaf tin lined with baking paper, place the mixture into the freezer to set, slice and enjoy!

Store this slice in a Tupperware container in the fridge for 7-10 days.

My must-have kitchen utensils and gadgets are… A high-speed food processor or blender

One piece of advice I would give to mums with fussy eaters...In my experience, the best thing was to accept it and let it pass. Keep ‘food’ relaxed and try not to worry about it. Set good examples and soon enough your little one will hopefully want to join in. I also started making a lot of simple green smoothies which my fussy child (and my not fussy child) enjoy. The smoothies put my mind at ease knowing that even if he does not want to eat he is still getting a variety of nutrients.

My kids favourite foods that I cook are…My daughters current favourite is the raspberry cheesecake and my son, who is still at home with me and is my number one taste tester loves the baked banana custard.

Most popular recipe on my site is…. our banana bread.

My favourite recipe is… I change my answer to this one every week, today I shall run with the caramel slice.

Typical dinner in Wholefood Simply household…we go through phases but everyone is loving the pistachio and apricot chicken at the moment.

I shop at…our local supermarket and the somewhat local organic food co-op.
