Paleo Pumpkin Pancakes:
These buckwheat pumpkin pancakes are paleo friendly; did you know that buckwheat is a seed and not a grain? These are so good and they are made in the blender!
Ingredients:
- * 1/2 tsp baking soda
- * 1/2 tsp sea salt
- * 1 tsp pumpkin pie spice
- * 2 tsp coconut oil for greasing the pan
Instructions:
- Mix all ingredients, except coconut oil in a blender. (I used my Vitamix, so it was quick)
- Blend until completely smooth.
- Heat oil in non-stick pan until hot.
- Pour in batter to form small pancakes (the small ones cooked better than the bigger ones).
- Cook on first side until completely done (wait until the edges start to brown and lots of bubbles appear on the top), then flip them.
- Cook shortly on the second side, until slightly crisp.
- Remove to plates and serve with maple syrup.
- Enjoy!
