You may have noticed I have been posting a lot of Paleo stuff lately. So to answer the many questions, No, I am not eating Paleo, and my blog will not just be Paleo. However, there are some great Paleo friendly dishes out there, and my sister/extended family eat a lot of Paleo, so I figured it was time to create some Paleo friendly recipes. This one was one of my faves. Yummy!
This was the absolute perfect meal for me this week. I wanted something packed with veggies, but totally decadent too. The sausage took this to decadent, the zucchini, peppers, and onions made me feel like I was getting a great boost of anti-oxidant rich, skinny-making veggie goodness. Yummers! I totally made this as a lettuce wrap filling, but truthfully, I had a bunch of chopped romaine all ready to go, and couldn’t stop snitching this, so I just dumped it on top of my romaine and ate it like a chopped salad. Mmm.
And as always, this was eazy peazy to throw together. In fact, it was kind of an accident. I was having a party with
a billioneleven five year olds, and realized I hadn’t eaten or fed my hubby and guest, so I grabbed the first thing I found (spicy sausage), and started pulling veggies out of the crisper, and this is what I ended up with. I liked it so much I made it again the next day.
Spicy Sausage Paleo Lettuce Wrap Filling
Spicy sausage combines with zucchini, onion, and sweet peppers and is served in a cool lettuce leaf.

Ingredients
- 1 lb spicy sausage
- 3 smallish zucchini chopped
- 1 small onion diced
- 2 sweet mini peppers
Instructions
Start browning your sausage
Add your onions, zucchini, and peppers
Cook until vegetables are tender
Serve in a piece of lettuce, over chopped Romaine, or eat plain! Enjoy!
