Makes 7 small pancakes. 150 Calories Per serving

Ingredients:

  • * 2 large free range egg
  • * 1 ripe banana
  • * a few organic raw cacao nib or chocolate chip optional

Instructions:

  1. Mash the banana in a bowl.
  2. Add eggs and whisk.
  3. Heat a non stick pan with a little coconut oil on medium high.
  4. When hot, drop a small amount of pancake mix into pan. Pancake should have a 3 inch diameter.
  5. Drop a few nibs or chips onto pancake mix.
  6. Turn after a minute or two, when mix has set on bottom.
  7. Cook the other side for another 30 seconds to 1 minute.
  8. Serve
