When summer rolls around, we’ll take any excuse to fire up the grill. Whether we’re looking for a creative BBQ main, an easy weeknight dinner or party side, grilled skewers are one of our go-to’s all season long. While we have plenty of favorite protein + veggie combinations, these Hawaiian chicken skewers just might be one of our favorites. With sweet pineapple, chicken, red bell peppers, and onion all basted in a sweet teriyaki-style sauce, these skewers are the ultimate summer dinner

Marinate the chicken.

If you’re looking for extra-flavorful chicken, feel free to marinate your chicken breasts beforehand. If you choose to do so, we recommend marinating for up to 5 hours before cooking. Choose your favorite sweet or savory BBQ sauce for the marinade, or consult our list of best-ever BBQ sauces if you need some inspo. 

Variations.

Just like most of our skewer recipes, you can really get creative with these. Swap out the chicken for tofu for a vegetarian skewer, or replace the bell peppers, onion, and pineapple with whatever you’re craving. Skewers should be easy and completely versatile—make these your own! 

Serving ideas.

We love serving these skewers alongside a plate of steaming white rice, but your options don’t stop there. Since you’ve got the grill out, why not serve these skewers with an array of grilled veggies and sides? Our grilled broccoli, grilled avocado, and grilled pineapple (because who can get enough?) would all make for delicious pairings.

  • 1/2 cup

    barbecue sauce

  • 1/3 cup

    soy sauce

  • 1 Tbsp.

    rice wine vinegar

  • 2 tsp.

    sesame oil

  • 2

    cloves garlic, minced

  • 1 Tbsp.

    ginger, minced

  • 1 tsp.

    honey

  • kosher salt

  • 1 tsp.

    crushed red pepper flakes

  • 2

    chicken breasts, cut into 1″ pieces

  • 2 cups

    cubed pineapple

  • 2

    green bell peppers, diced

  • 1

    red onion, diced

  • White rice, for serving

  • 2 tsp.

    cilantro

    1. Step 1Preheat grill or grill pan on medium heat.
    2. Step 2In a large bowl, whisk together barbecue sauce, soy sauce, vinegar, oil, garlic, ginger and honey until completely combined. Season with salt and red pepper flakes.
    3. Step 3Build skewers by alternating chicken, pineapple, peppers, and red onion. Place on a baking sheet and pour over half your marinade.
    4. Step 4Place skewers on preheated grill, and brush with reserved marinade. Cook five minutes and flip, brushing the other side with marinade as well.
    5. Step 5Cook five more minutes, or until the chicken is cooked through.
    6. Step 6Serve with white rice and a sprinkle of cilantro.
