Flourless Oatmeal Raisin Cookies:
A delicious, low-calorie breakfast or dessert option that contains lots of ingredients that promote lactation for nursing mothers.
Ingredients:
- 7.5 cups whole oats (5 cups ground in food processor, 2.5 cups whole)
- 5 large eggs
- 3 cups skim milk
- 6 medium bananas, mashed
- 2.5 cups raisins
- 1 cup ground flax seed
- 1 cup sliced almonds
- 2 tbsp cinnamon
- 2 tbsp honey
- 1/2 tsp salt
- 2 tbsp olive oil
Instructions:
- Preheat oven to 350. Combine ingredients in large mixing bowl. Using a 1/4-cup measuring spoon, scoop onto a baking sheet prepped with your choice of non-stick spray. Let sit for about 5 minutes to thicken, then put in the oven for 17-20 minutes. Cookies should be soft but not mushy. Store in a bag or plastic container in the refrigerator. Tastes great reheated in the microwave for 30 seconds!
