  • 8 slice bacon
  • 1 lb. chicken tenders
  • 1 tsp. Coarse salt
  • 1/2 tsp. black pepper
  • 1 firm, ripe avocado
  • 1 tbsp. fresh lime juice
  • 4 tomatoes
  • 1/2 c. shredded Swiss cheese
  • 1/2 c. shredded Cheddar cheese
  • 8 flour tortillas
  • Accompaniments: salsa and low-fat sour cream

Directions

    1. Step 1In a large nonstick skillet, cook bacon over medium heat until crisp, 5 to 6 minutes; drain on paper towels. Break pieces in half.
    2. Step 2Meanwhile, heat a nonstick pan over medium heat. Spray with cooking spray. Season chicken on both sides with salt and pepper. Cook 4 minutes per side or until cooked through. Remove from heat; cut chicken into strips.
    3. Step 3Halve avocado and remove pit. Cut flesh into thin slices, then scoop out of peel with a spoon. Drizzle lime juice over avocado slices.
    4. Step 4Top 4 of the tortillas with chicken, bacon, avocado, tomatoes, and cheese, dividing evenly. Place remaining tortillas on top.
    5. Step 5Place 1 quesadilla in a skillet over medium heat, pressing down occasionally until browned on one side, 3 to 4 minutes. Carefully flip and cook second side until tortilla is browned and cheese is melted. Keep warm while you repeat with the remaining quesadillas. Cut each into wedges; serve with salsa and sour cream.
