Chicken Pot Pie:
This is a delicious, low fat and low calorie meal with plenty of nutrition.
Ingredients:
- 8 Pillsbury reduced fat crescent rolls (do not separate)
- 3 carrots (cut into small discs)
- 1 med. yellow onion (chopped)
- 1 cup fresh green beans (cut into pieces)
- 1 cup frozen peas
- 1/2 cup frozen or canned corn
- 1 clove garlic
- 1 tbls olive oil
- 2 tbls whole wheat flour
- 1.5 cups chicken broth (fat free)
- 1 cup 98% fat free cream of chicken soup
- 12 oz roasted chicken breast no skin (shredded)
- 1 tbls poultry seasoning
- 1 tbls fresh chopped sage leaves
- 1 tsp fresh chopped or dried thyme leaves
- 1/2 tsp salt
- dash pepper
Instructions:
- In olive oil saut carrots, onion, green beans and garlic until until carrots are slightly softened. Add peas and corn and stir. Sprinkle with flour and stir until totally incorporated. Add chicken broth, poultry seasoning, sage, thyme, salt and pepper and stir until thickened. Add cream of chicken soup and roasted chicken breast stir until well combined.
- Turn into a prepared casserole dish (sprayed with baking spray). Roll out crescent rolls with rolling pin cover casserole and bake in a 375 degree oven for 40 min.
