Secretly Healthy Donut Holes (Again!)

I’m here to give you what you want. The people have spoken (in my Instagram survey). And demanded MORE donut holes 😀

Because of the overwhelming response to my Cinnamon Sugar Donut Holes  (possibly my most highly rated recipe EVER) I created a NEW donut hole flavor for all my fellow donut lovers.

Now it’s time for BLUEBERRY. Oh em gee you guys! I love this flavor too.

These are JUST as easy to make as the cinnamon ones, and dang, the TASTE is just as unbelievable.

Delicious Taste and Texture

Get ready for melt-in-your-mouth goodness, friends!! DONUT HOLES!

  • Light and pillowy,
  • Perfectly sweet,
  • Speckled with blueberry bits, and
  • “Sugar” coated for amazing texture

They almost remind me of beignets. Especially when they’re RIGHT out of the oven, warm and SOFT. Mmmmm.

No frying, no sugar, no flour, no butter, no eggs, no yeast, nothing complicated and nothing unhealthy.

Easy, 5-SECOND Keto Blueberry Donuts

Yeah, you read that right. Just throw ALL the ingredients in a food processor and blend for about FIVE SECONDS to make the dough.

It doesn’t get much easier than that, lol.

Super simple. Super quick.

I use this classic Cuisinart food processor (which has held up to years and YEARS of heavy use)

No food processor? Blending your blueberries using a small blender should work. Then just mix together the berries and other ingredients by hand in a mixing bowl.

Simple, Healthy Ingredients

Unlike conventional donuts, these are gluten-free, grain-free, dairy-free, egg-free and most importantly, sugar-free! These contain fiber and protein that help you avoid a sugar-crash, and are great for a satisfying breakfast treat.

  1. Almond Flour
  2. Coconut Flour
  3. Blueberries
  4. Coconut Oil
  5. Monkfruit (erythritol blend)

And I pretty much *always* add a splash of Mexican vanilla extract and a dash of pink salt to evvverything. It just enhances the flavor so much.

How to Make Donuts without a Donut Pan

Great news, you don’t need a special pan, donut molds, or extra appliance to make these healthy donut holes!

  • Simply blend both the dry and wet ingredients together for the dough in a food processor. (It’s quick and easy!)
  • Scoop the dough into balls using a cookie scoop.
  • Roll the dough smooth in your hands and place on a lined cookie sheet.
  • Bake until the tops feel firm and spring back. (It’s normal for the bottoms to get a little darker, especially if you are using a dark-colored pan.)
  • If you like a sugar coating, roll the freshly baked donuts in a small bowl of monkfruit granules. (Be sure to do this after baking otherwise it will melt.)

FRESH vs FROZEN Berries

No fresh berries? No problem. You can thaw frozen blueberries to use in this recipe.

Just drain the excess liquid before adding them since frozen berries tend to have higher water content.

If you have WILD blueberries, those would give the BEST classic blueberry flavor. Yum! (AND it makes these a really pretty shade of purple!!)

I used fresh organic blueberries from Aldi, and they were deliciously SWEET. (And also happened to be enormous, haha!)

TIP: use blueberries that are SWEET and not too tart for best results. But you can always sweeten your dough to taste 😉

I think you’re gonna love these donut holes! What’s not to love?? Sinfully good taste, without all the SUGAR and carbs. 90 calories and under 2 net carbs a pop! Woohoo!

Enjoy them fresh from the oven when they’re warm and pillowy, or straight from the fridge! Either way, one bite makes me go OMG.

Instructions

  • Preheat oven to 350.

  • Place all ingredients in a food processor and blend for a few seconds. Taste and adjust for sweetness and consistency (If dough is too wet, add 1 teaspoon coconut flour, or if too dry, add a splash of water.)

  • Use a cookie scoop to form balls, roll smooth in your hands and place on a baking sheet lined with parchment.

  • Bake for about 10 minutes until firm to the touch. Dip each hole in monkfruit while still warm.

  • Enjoy! 🙂

Notes

To store: Refrigerate for up to 7 days in an airtight container.

To make powdered monkfruit, simply blend ⅓ cup granulated (classic) monkfruit in a personal size blender for about 10 seconds.

How to Store Donut Holes

Store these in the refrigerator for the best freshness. They should last about 7 days. They may be frozen, too, for longer storage. Keep them in an airtight container.
