Can this bread be toasted?
Absolutely! We prefer toasting in a toaster oven rather than a pop-up toaster since the slices are fairly small.
Do I have to use agave?
Not at all! Honey, maple syrup, or stevia would be delicious replacements. Or, if you’re going completely sugar-free, use your favorite granulated sugar replacement like Swerve or Erythritol. You can substitute any of these sugars 1:1 for agave!
Why is there vinegar in this recipe?
Vinegar might seem like an odd ingredient for bread, but in this recipe, it’s an important one! There’s baking soda in this recipe, and in order for it to work properly, it needs an acid. That’s where the vinegar comes in. No acid = no lift, so we want to make sure we’ve got something acidic in the dough to put that baking soda to work. If you don’t have vinegar on hand, try lemon juice!
How long does this bread keep?
Stored in an airtight container in the refrigerator, this bread can last 4 to 5 days. If you’d like to keep the bread longer, place the slices in a resealable plastic bag, remove as much air as possible, seal and freeze. Frozen slices can easily be toasted and topped—we recommend making this Greek avocado toast and never looking back. 😍

- Step 1Preheat oven 350° and line a 8″-x-5″ loaf pan with parchment paper.
- Step 2In a large bowl, whisk together almond flour, flaxseed meal, coconut flour, baking soda, and salt. Add eggs, olive oil, agave, and apple cider vinegar and whisk until smooth and completely combined.
- Step 3Pour batter into prepared loaf pan and smooth top with a spatula. Bake until top is golden and a toothpick inserted into the center comes out clean, 35 minutes. Lift loaf out of pan and let cool completely before slicing.
