Ingredients for Thai Red Turkey Meatball Curry

To prepare this mouthwatering dish, you will need the following ingredients (included are some notes on each ingredient that may be useful).

For the Turkey Meatballs:

  • 5% fat ground turkey (mince) – I recommend not using any leaner than this otherwise the meatballs can be dry. You can also swap this for any mince you like.
  • Tomato Paste – this comes in a small can or tube
  • Garlic, crushed – this is fresh garlic, but you can use jarred or lazy garlic if you prefer
  • Onion powder
  • Fresh cilantro – if you are not a fan of cilantro (coriander) swap this for chopped spring onions
  • Baking Soda – may seem like an odd ingredient, but it helps lock in the moisture and keeps the meatballs tender.
  • Red Chilli Flakes – adds some additional heat, but you can omit if you prefer
  • Salt and black pepper
  • low calorie spray – this helps to make the meatballs perfectly round by spraying your hands before forming.

For the Curry Sauce:

  • Thai red curry paste – a Thai brand is recommended, supermarkets brands can lack flavour and can be quite mild in heat.
  • Coconut milk – I use aroy-d lite, but any light coconut milk is fine.
  • Chicken stock – When using stock in recipes, it’s important to note that the required quantity may vary depending on the brand you use. Different brands may require different amounts to achieve a specific measure of stock. Be sure to follow the instructions on the packaging or adjust accordingly to maintain the desired flavor and consistency in your dishes.
  • Fish sauce – this is a must for any Thai Curry, despite it’s name it will not give an overpowering taste of fish.
  • Granulated sweetener – I always use erythritol, but you can use your own preferred brand or swap for honey, maple syrup or brown sugar (just be away this will add additional calories)
  • Lemongrass paste – this comes in a tube, you can omit if you can get this and just add a little additional lime juice.
  • Lime juice – adds a punch of flavour
  • Vegetables – I used carrot, courgette (zucchini) and red bell pepper) but you can swap for any vegetables you like.
  • Cornstarch – this helps to thicken the sauce slightly, as lite coconut milk has a higher water ratio so is not as thick as regular.

Can I cook the meatballs in an Air Fryer?

Don’t want to have to turn on your oven to cook the meatballs? These yummy turkey meatballs can be cooked in a air fryer while you prep the sauce.

Just preheat your air fryer to 190c/375f for 3 minutes, then line the air fryer basket with a sheet of parchment paper or you can use the grill pan insert. Grease hands with low calorie spray as per recipe and form into meatballs, then add the meatballs to the preheated air fryer (make sure you space them apart) and cook for approx 8 minutes, rotating half way until form and golden. Then you can set aside until ready to add to the sauce.

Thai Red Turkey Meatball Curry – The combination of juicy turkey meatballs and a lighter coconut, spicy curry sauce creates a harmonious blend of textures and tastes that will leave you craving more.

Ingredients

  • For the meatballs:
  • 500g of 5% fat ground turkey (mince)
  • 1 tablespoon of tomato paste
  • ½ teaspoon of baking soda
  • big handful of fresh coriander, finely chopped
  • 2 cloves of garlic, crushed
  • ½ teaspoon of onion powder
  • pinch of red chilli flakes
  • ¾ teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 small carrot, sliced into batons
  • 1 red bell pepper, sliced
  • 1 medium courgette (zucchini), halved lengthwise and sliced
  • 2-3 tablespoons of Thai Red Curry Paste *see note
  • 1 tablespoon of lemongrass paste
  • 1 tablespoon of fish sauce
  • 1 tablespoon of granulated sweetener (or can use maple syrup or honey)
  • 400ml can of light coconut milk
  • 180ml of chicken stock
  • 1 tablespoon of cornstarch
  • low calorie spray

Instructions

  1. Mix the ingredients for the meatballs in a large bowl until well combined and then grease hands with low calorie spray and form into 16 equal sized meatballs.
  2. Preheat oven to fan 180c, 200c/400f or gas mark 6
  3. Line a baking tray with parchment paper, add the meatballs (well spaced apart), spray over the top with low calorie spray, and cook for approx 12 minutes until they are golden and firm. Set aside.
  4. Heat a deep large frying pan over a medium high heat and spray with low calorie spray, add the curry paste and cook stirring for about 30 seconds, then stir in the fish sauce, lemongrass, granulated sweetener, coconut milk and stock and whisk until all combined. Mix the cornstarch a little water to make a slurry and stir this into the sauce.
  5. Add in the vegetables and simmer until the vegetables are tender.
  6. Add in the meatballs and continue to bubble for approx 3-5 minutes ensuring the meatballs are fully cooked and heated through.
  7. Garnish with fresh coriander and enjoy!
  8. Optional: serve with some sliced red chili for additional heat, crushed peanuts and lime wedges
