Are sunchokes healthy to eat?

Sunchoke chips can be addicting and delicious, kind of like potato chips, but before eating a whole bowl of them it is important to know how this little unassuming tuber may impact your body. Besides being called Jerusalem artichokes, sunchokes are sometimes referred to as “fartichokes.” Unfortunately this is a nickname that holds a good amount of truth behind it. Sunchokes are high in the carbohydrate inulin, also found in jicama and salsify. Inulin cannot be digested naturally and when the bacteria found in our digestive systems get to work on it, many people feel its adverse effects. However, not all people feel badly after eating sunchokes, and many chefs argue that if you consume them peeled and cooked, your chances of feeling bloated decrease greatly.

So is it worth it? Many people love sunchokes’ earthy, “artichokey” flavor and versatility and will continue to cook and consume them no matter what. Others can’t justify the uncomfortability. Ingredients  

  • 8 10 sunchokes Jerusalem artichokes
  • 1 teaspoon sea salt
  • olive oil spray

Instructions 

  • Using a vegetable scrubber, clean sunchokes. Dry thoroughly.

  • Thinly slice the sunchokes using a mandoline slice (do not peel).

  • Place in the air fryer. Spray lightly with olive oil and sprinkle with sea salt (dividing into batches).

  • Cook at 350° for no more than 15 minutes. (peek in after 7 minutes)

Notes

Tip: Chips cook best when placed in a single layer in the air fryer – they will shift around when cooking though so peek in halfway through and readjust.
