Succulent Poached Chicken With Low-Calorie Sweet Potato Salad:
For the most deliciously tender, juicy chicken breast, try poaching instead – it’s super-easy and will create a moreish, melt-in-mouth consistency. This simple poached chicken recipe is light in calories but packed full of flavour, accompanied by a tangy, zesty spring onion and sweet potato salad.

- 500ml/1pt hot vegetable stock
- 1/2 a lemon, chopped
- 6 peppercorns
- 4 chicken breasts, skinless
- Lemon wedges for garnish (optional)
For the potato salad:
- 2 sweet potatoes, peeled and cubed
- Bunch of spring onions, chopped
- 2-3tbsp 0% Greek yoghurt
- Handful of fresh flat-leaf parsley, finely chopped
- Step 1Add stock, lemon and peppercorns to a large pan. Bring to a simmer and add chicken. Simmer with lid ajar until chicken is cooked, 20-25 mins. Remove and put to one side.
- Step 2Meanwhile, cook potatoes in a pan of boiling, salted water, until tender, about 10 mins. Drain and leave to cool.
- Step 3Tip potatoes and spring onions into a bowl, add yoghurt, season and toss to coat. Slice chicken on diagonal and serve with potato salad. Sprinkle over parsley and serve with wild rocket.
