These Honey and Lime Pork Nachos are packed full of fresh, zesty flavours and are guaranteed to transport you straight back to your summer holidays.
The tomatoes, coriander and onion sprinkled over the top help to make these nachos really colourful and vibrant, and using reduced fat cheese means that you can still enjoy an indulgent tasting dish without worrying about loads of unnecessary calories and Points.
We’ve used store bought tortilla chips in this recipe, but if you’d rather make your own then it’s really simple and they taste fantastic! Simply spray a low calorie tortilla wrap with some low calorie cooking spray, sprinkle paprika and sea salt on both sides and then cut into tortilla chip shapes. Spread on a greased baking tray and bake for around 5 – 7 minutes in a 180°C oven, turning once halfway through.

I always double up the ingredients for the the sauce for this recipe as we prefer it with more sauce.
A slimming version of loaded nachos which tastes great.
I switched the pork mince to chicken which was delicious. I also used concentrated lime juice as I had no limes in which worked really well.
