Our Cauliflower and Chicken Fried Rice is our healthier take on the higher calorie chicken fried rice takeaway dish.

We’ve used riced cauliflower instead of rice to help keep the calories and carbs lower, but we promise that you can hardly taste the difference! You can use a blender to rice your cauliflower (which is what we’ve done), but if you don’t have one then you could just use a grater instead – it’ll work just as well.

This Cauliflower and Chicken Fried Rice really is a meal in itself, but we also love it when served as part of a Chinese fakeaway feast. It’s perfect for a Friday night or at the weekend when you fancy a bit of a treat but don’t want all of the extra Points and calories.
