This Low Calorie Rice Pudding is low calorie and sugar free! At just 108 calories, you can enjoy this skinny rice pudding guilt free! The healthy rice pudding has just 0.1g of sugar, and is still super sweet, thanks to my low calorie trick (see the recipe card!)
Ingredients You’ll Need:
1 ½ cups water
¾ cup uncooked rice long grain white or brown (not instant)
1 egg beaten
2 cups unsweetened almond milk
¼ teaspoon salt
⅓ cup All-Natural Zero Calorie Brown Sugar (see recipe card below)
1 teaspoon vanilla extract
3 teaspoons ground cinnamon
¼ cup dried cranberries (optional)

Meal Prep: This is a great meal prep recipe! You will want to chill the dish, so go ahead and make it a day or two before you plan on serving. Then store in an airtight container in the fridge. Storage: Will hold for 4-5 days in the fridge. Freezer storage is not recommended.
