  • Cottage Cheese: You can use whatever type of cottage cheese you prefer including small or large curd and fat-free cottage cheese, low-fat cottage cheese,  or full-fat cottage cheese.  Full fat will give you a creamier, richer, final cottage cheese queso, but will of course be more calories, if you are keeping track of that.  The other consideration is the full-fat cottage cheese will melt a bit easier in the microwave.
  • Cheddar Cheese: You’ll want shredded cheddar cheese.  If you shred your cheese, it will melt better, but I have made it with store-bought shredded cheddar and it worked fine.  You can also substitute pepper jack, Mexican blend cheese, or Colby jack.
  • Green Chilies: The small 4-ounce can of green chilies is my magical addition to this recipe. It gives the queso a lot of depth of flavor, without much work.  It’s not spicy, just flavorful.
  • Taco Seasoning: I make my own Taco Seasoning with this recipe, but you can buy your favorite store-bought taco seasoning.  It’s a combination of chili powder, ground cumin, garlic powder, onion powder, smoked paprika, and chipotle pepper.
  • Optional Garnish: Cilantro, Pico de Gallo, diced tomatoes, or Salsa

  3. To warm up, put it in a microwave-safe bowl and microwave the queso in 15-second increments until warm, stirring between. The cottage cheese can separate if you warm it up too quickly or too much.  My best tip is to keep it just warm enough for it to be melty and not super hot.
