I love summer, I love watermelon, and I love strawberries! But sometimes you can’t eat all the freshly picked strawberries and huge watermelon right away. So I like to turn leftovers into healthy smoothies or fruity ice cream treats!

Anyway, today I would like to share this idea for using up leftover fruit with you. So I share this strawberry watermelon popsicle recipe, which also works great with any other type of fruit. It’s super easy to make and the result is just perfect when you need a cool, refreshing and low-calorie snack. Of course, if you have an ice cream maker, you could also turn this into a fruit sorbet.

Vegan 3 ingredient ice cream made from natural ingredients

For this strawberry watermelon popsicle recipe, all you need is fresh fruit. I use:

  • Strawberries: These can be fresh or frozen.
  • Watermelon: cut into pieces and seeded.
  • Lime: the juice of it and a little zest.

Other possible fruit variations include:

  • Berries: Raspberries, blueberries, blackberries, currants, gooseberries
  • Stone fruits: cherries, apricots, nectarines, peaches, plums, pears, apples
  • Citrus fruits: oranges, mandarins, lemons
  • Exotic fruits: bananas, mango, passion fruit, pineapple, papaya

Vegan Strawberry Cheesecake or Yogurt popsicles

If you love my vegan New York Cheesecake or the best Strawberry Cheesecake, you can also turn this recipe into Strawberry Cheesecake popsicles. To do this, simply purée just 8.8 oz (250 g) of strawberries and then layer it with 8.8 oz (250 g) of cashew cream (see vegan Magnum recipe) or vegan coconut or vanilla yogurt in the ice cream molds.

  1. First, cut the watermelon into large chunks, removing the seeds, and cut the strawberries in half.
  2. Then blend all ingredients until smooth, pour into ice cream molds, insert sticks and freeze. That’s it!

Tips for making popsicles 

  • If you are using frozen strawberries, rinse them briefly under warm water to remove any ice crystals and make blending easier.
  • You can either purée the fruit in a blender or use an immersion stick blender.
  • When you pour the “smoothie mixture“ into the ice cream molds, be sure to leave some space at the top for them to expand.
  • The strawberry watermelon ice cream needs to be frozen for at least 4 hours until hard.
  • To make it easier to remove the frozen popsicle from the mold, you can hold the mold under warm water for a few seconds.

Ingredients

  • 8.8 oz (250 g) strawberries fresh or frozen
  • 8.8 oz (250 g) watermelon cut into pieces and seeded

  • Cut the watermelon into large chunks and remove the seeds. If using frozen strawberries, rinse under warm water to get rid of the ice crystals. Then cut into halves.

  • Add all ingredients to a blender and blend until smooth (or use an immersion stick blender).

  • Pour the “smoothie mixture” into popsicle molds, leaving a little space at the top for them to expand. Insert sticks and freeze for at least 4 hours, or until hard.

  • Run the mold under warm water for a few seconds to loosen them up as needed, then remove from the mold.
