You might think halloumi fries don’t sound that slimming friendly, but we’re baking them in the oven, rather than frying them – this cuts out so many calories! This is a hearty, satisfying salad that’s bursting with flavours.
You won’t want to skip the sweet chilli-infused dressing! It adds just the right amount of subtle spiciness to cut through the strong, salty taste of that golden, breadcrumb-coated halloumi. Finish with a sprinkle of sweet pomegranate and some fresh mint leaves. Salads don’t get much better than this!

While the halloumi fries are baking, make the salad. Divide the rocket between two plates, leaving a space in the middle for the halloumi fries. Divide the orange chunks, beetroot and cucumber between the two plates and sprinkle over the pomegranate seeds.
