  • 8 ounces boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1 tablespoon canola oil
  • 1 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 1 clove minced garlic
  • 1 tablespoon fresh thyme
  • 1 cup brown rice
  • 2 cups chicken broth
  • 1 (28-ounce) can diced tomatoes, undrained
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground red pepper
  • 1 pound shrimp, peeled
