Meal Prep: You can make the batter ahead of time and chill it in the fridge for up to 5 days. You can also scoop the cookie dough into balls, place on a baking sheet and freeze. Once completely frozen move to a freezer bag or container and store for up to a month in the freezer. Bake as directed – baking just 1 cookie or the entire batch still requires the same heat and time. Storage– Store in the fridge for 5 days or the freezer for 1 month.

Special Tip: If you are using my low calorie marshmallow recipe, they are BIG. So you will need to dice them. I recommend using kitchen scissors to do this, and if they stick, simply wet the scissor blades.

Preheat oven to 325 degrees and line a baking sheet with parchment paper.
To a large bowl combine the flour, sugar, baking soda and salt. Mix well.
In a separate bowl combine the apple sauce, vanilla extract and water. Whisk together.
Pour the wet ingredients into the dry ingredients and mix together until just combined.
Add 1/2 of the chocolate chips, the marshmallows and 1/2 of the graham cracker pieces, and fold into the batter.
Scoop out 16 cookie balls and place on the prepared baking sheet.
Wet your hands a little and then press the cookies down a bit to form cookie rounds.
Top with remaining chocolate chips, and graham crackers.
Bake for 7 minutes, then remove from the oven and let cool completely on the baking sheet (they will continue to cook on the sheet while they cool.)
